Virtual Christmas Cookie Exchange Linky!

 

Annie Doyle (Doyle’s Speech Works) is having a virtual cookie exchange!  I was so excited when Annie brought up the idea and knew I would be linking up!  This fantastic SLP and I also happen to share some things in common.  She used to live in my home state of New Jersey, she is of Italian heritage and she loves to cook and bake!   I love how blogging has allowed so many of us get to know each other!  Hopefully I will get to meet Annie in person someday soon!

I was brought up with the influences of two cultures, Italian and Polish.  My very Polish mother cooked great Polish as well as Italian meals.  And when the holidays approach, cookie baking was always a main event in our home!  Me and my three sisters helped my mother make eight to ten different types of cookies for the holidays.   Today, the tradition has been passed down to me!  I make many of the same cookies that my mom did and have added a few new additions of my own.  I bring them to our La Vigilia (Feast of the Seven Fishes) every Christmas Eve.

One of the cookies that has always been the first to disappear from the cookie tray is the Polish lekvar cookie.  It just isn’t  Christmas at our table without the lekvar cookie present!  It is one of the most labor-intensive of the cookies I bake and I have learned to gain great appreciation for all that  hard work my mom put into these wonderful creations. We savor these cookies since Christmas is the only time of year that they are  made.  Not only are they time consuming to prepare, but it just seems out of place to enjoy them at any other time of year!   (NOTE: This cookie is also known as  Hungarian Kiffles or Hungarian Lekvar and as Hamantaschen by the Jewish).

Today I am sharing this wonderful cookie tradition with all of you.  I hope you enjoy them as much as my family does.

So here is the secret ingredient—prune butter.  Prune butter? Yup!  It really is wonderful.  Believe me, even the little kids love this!!  It’s made from sweet, dried plums and really is a fantastic filling for these cookies.  I also made these cookies with apricot filling although the lekvar filling seems to be the more popular of the two.

Check out the recipe card below.  There are only a few simple ingredients that go into this recipe so it doesn’t appear very complicated, however the tedious part lies in the rolling, cutting, filling and folding.   But don’t let that intimidate you! Once you have made a few batches, you will be an old pro, and the finished product will be well worth it!   Enjoy the process.  If you have kids at home, get them involved and make it a teachable moment in measuring, sequencing and direction following. Most importantly, make some memories as you spend time together during this holiday season!

    A lot of people think I’m of Polish descent because of my maiden name, but we’re German! But I can pretend to be Polish & try these out! They look really good!

    Your cookies look sooooo good! Do you have a hint for keeping the edges together? Sometimes they’ve pulled apart when I’ve made these. ~Linda

      I have had the same thing happen to me in the past Linda! I made these so many times that I think I have it figured out….I put a little less filling in the middle and pinch the two corners together really tightly. Brushing the egg wash over the top also helps seal them together. Hope that helps!

It’s hard to believe that just a year ago, we opened our doors for the very first time, welcoming young chefs into our kitchen. In just two weeks, we’ll kick off YEAR TWO with our Spring session, and we couldn’t be more excited!

We created a winter wonderland in tne speech room while working on DIRECTION FOLLOWING, SEQUENCING, AND VOCABULARY, (symmetrical, unique, secure, seasonal) , /s/ and /s/ blends.
.
This craft is called an ARIZONA SNOWFLAKE. Can you figure out why??? I asked my students to tell my why they think this is the name. Some struggled, so I gave them clues to help them reason through and connect the dots. 
.
For this project you will need 8 paper lunch bags. Secure them together with a bead of glue down the middle of each bag ( I chose to do this part by hot gluing them but a good glue stick will als do the job.) The students needed to make sure the bags were neatly layered directly on top of each other and all facing the same direction). Next they drew a pattern on one half of the bag and made a symmetrical design on the opposite side. They used scissors to cut through the layers of bags ( with assistance if needed). They opened and spread out the bags from each end.... and like magic.... our SNOWFLAKE came to life!!

This low cost, low prep activity has been a hit with my older students. Have fun making snowflakes in speech this holiday season!!

WHAT A DILLEMA‼️I try to guestimate correctly, WHAT A DILLEMA‼️I try to guestimate correctly, but every year I seem to buy more candy than I need! So now what do I do with it all? 😕

A. Bring it to work for my students and coworkers?
B. Throw it out?
C. Bake up some 
CANDY BUCKET COOKIES❓️‼️🍫🪣🍪

If you guessed C, you are correct! Although A and B would probably be better for my health, the creative, sugar-addict side of me is winning this battle.

This recipe is a great way to support DIRECTION FOLLOWING, SEQUENCING SKILLS, EXECUTIVE FUNCTIONING and SO MUCH LANGUAGE!

Here's the recipe:
1 cup (2 sticks) butter, softened
1 cup white sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla
2 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups leftover Halloween candy (chopped)
Beat butter and sugar until smooth....beat in vanilla and eggs...add flour, baking soda and salt...slowly stir in candy pieces...plane 2 tablespoon scoops of dough onto cookie sheet spaced 1 inch apart...press extra candy pieces on top of each scoop....bakes at 350 degrees for 9-11 minutes until browned around edges....let cool 5 minutes....enjoy!!!!!🍪👨‍🍳🍪👩‍🍳
