Oven-baked (*quick*– not over-night!) French Toast Casserole

One of the ultimate comfort foods on a cold winter morning, for me, is french toast. What I love even more, is the easy preparation and clean up with this recipe. I prepare all the ingredients in one large pyrex baking dish and instead of cooking on the stovetop, I bake it in the oven. I have also found that if I decide to make this last minute, it turns out just as good as the overnight version of baked french toast that you may have seen recipes for. The one great thing about the overnight version is—prep it the night before and then just pop it in the oven in the morning, and bake. It’s ready in minutes. If you choose to prepare it and bake it on the same day, give yourself a little extra time (a less-busy weekend morning is a good time for this!) The key is the bread for this recipe! I recommend using a loaf of thick, pre-sliced brioche. It will absorb the egg mixture quickly and produces a well-baked casserole.

SpeechSnacks Alert! This recipe is a great way to get children involved in learning some cooking skills. They can help crack the eggs, measure the milk and dry ingredients, mix and blend the ingredients together with a fork or whisk, dip the bread into the mixture, and layer the bread in the baking dish!

Ingredients:

1 loaf brioche bread

8 eggs

1/2 cup half and half or whole milk

4 tablespoons brown sugar

2 teaspoons ground cinnamon

2 teaspoons vanilla extract

Directions:

Preheat oven to 325 degrees. Lightly butter a 13X9 inch Pyrex baking dish. Add 8 whole eggs, half and half, brown sugar, and cinnamon. Whisk together until well blended. Cut 8-10 slices of bread in half, I prefer diagonally. Coat each bread slice in the egg mixture and arrange it in dish, overlapping slightly but allowing for all pieces to have enough surface area exposed in order to cook evenly. Bake at 325 degrees for approximately 30 minutes. You will know it is ready when the bread starts to turn golden brown and all of the egg mixture is absorbed by the bread during the baking process.

Prior to baking I added frozen blueberries between the layers and on top of the casserole. You can also substitute other types of berries in this recipe. Use the spatula to serve. Enjoy with powdered sugar, maple syrup, any sweetener of your choice. It’s great without any additional sweetener as well.

    These were delicious – and saved so much time and mess from usually making them on a griddle. I used some potato bread instead of brioche and it worked just fine. Love that these do not require overnight chilling in the refrigerator. Sometimes there isn’t room in there for them.

      You can use another milk subsitiute (soy, almond, oat milk). You should be able to make an even swap regarding measurements.

    We loved this recipe! We had leftover small croissants which we split and used in place of the bread and that gave us an outside crunch and soft inside. Sprinkled with blueberries, it was a great breakfast. We’ll definitely use again!

We created a winter wonderland in tne speech room while working on DIRECTION FOLLOWING, SEQUENCING, AND VOCABULARY, (symmetrical, unique, secure, seasonal) , /s/ and /s/ blends.
.
This craft is called an ARIZONA SNOWFLAKE. Can you figure out why??? I asked my students to tell my why they think this is the name. Some struggled, so I gave them clues to help them reason through and connect the dots. 
.
For this project you will need 8 paper lunch bags. Secure them together with a bead of glue down the middle of each bag ( I chose to do this part by hot gluing them but a good glue stick will als do the job.) The students needed to make sure the bags were neatly layered directly on top of each other and all facing the same direction). Next they drew a pattern on one half of the bag and made a symmetrical design on the opposite side. They used scissors to cut through the layers of bags ( with assistance if needed). They opened and spread out the bags from each end.... and like magic.... our SNOWFLAKE came to life!!

This low cost, low prep activity has been a hit with my older students. Have fun making snowflakes in speech this holiday season!!

CANDY BUCKET COOKIES❓️‼️🍫🪣🍪

If you guessed C, you are correct! Although A and B would probably be better for my health, the creative, sugar-addict side of me is winning this battle.

This recipe is a great way to support DIRECTION FOLLOWING, SEQUENCING SKILLS, EXECUTIVE FUNCTIONING and SO MUCH LANGUAGE!

Here's the recipe:
1 cup (2 sticks) butter, softened
1 cup white sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla
2 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups leftover Halloween candy (chopped)
Beat butter and sugar until smooth....beat in vanilla and eggs...add flour, baking soda and salt...slowly stir in candy pieces...plane 2 tablespoon scoops of dough onto cookie sheet spaced 1 inch apart...press extra candy pieces on top of each scoop....bakes at 350 degrees for 9-11 minutes until browned around edges....let cool 5 minutes....enjoy!!!!!🍪👨‍🍳🍪👩‍🍳
